One possibility would be to use Nick Cox's -ciplot- program (downloadable 
from SSC), which plots means with confidence intervals.

Another possibility would be to generate a dataset (or resultsset) with one 
observation per value of the X-axis variable and data on means of the 
Y-variable (with or without confidence limits). This can be done using 
-statsby-, or possibly by using -xcollapse- (downloadable from SSC). This 
resultsset can then be loaded into memory and plotted using Stata graphics.

in web-aware Stata, and you will find some downloadable .pdf files on the 
subject.
