st: Collapse All

Hi,

I have a large dataset and I need to collapse it but don't want to
list out all the variables by hand.
I have tried using _all
Only thing is that I can't then use my date variable for the by()
command because it is already contained in _all.

Is there a way to get all (_all) except for one of the variables?
