You have already given the answer with respect to -summarize-. In case
of -correlate- you can make a matrix containing the corrlation matrix
and display it using the -matlist- command. Creating the correlation
matrix is explained in

matrix accum R = displacement mpg rep78, nocons dev
matrix R = corr(R)
matlist R, format(%12.4f)
correlate displacement mpg rep78
