Well you could start with the Users Manual and the Programming Manual,
and even the Data Management Manual (see
http://www.stata.com/manuals/).

An excllent series of articles by Nick Cox entitled "Speaking Stata"
exists in the Stata Journal (see http://www.stata-journal.com/) that
provide lucid insights into the intricacies of programming in Stata
and the ways in which to get things done.

The statalist archives in and of themselves contain innumerable
details of how to solve various programming problems in Stata.
