After trying TexShop and TeXMaker, both good and free, I paid for Latexian. The best of its many virtues is amazing live preview.

Is this some special package of TeX or LaTeX for Stata Mac users that you seek?

I've not heard of one, but others would know more about this.

I told Bob, off-list,

No; the sjlatex package works on any version of LaTeX, as LaTeX is platform-independent as long as you stay away from proprietary kludges like Scientific Word. I personally like TeXShop (downloadable from Apple website, free), but there are other nifty LaTeX implementations for OS X.
