Schemes will help you. -s2mono- and -s2color- make gridlines;
-s1mono- and -s1color- do not. There are also unofficial schemes,
like lean1 and lean2; they make (almost) everything in black
and white. Find them with -findit lean scheme-.
 
So before creating the individual graphs:
 
   set scheme s1mono
or
   set scheme lean1
