You can disable the behavior (so that typing "_" will give
"_"), which makes ESS more useful for Stata, with

M-x ess-toggle-underscore


P.S. Maybe one of the ESS folks could give a .emacs addition
that would make this the default for .do and .ado files and
the Stata process?
