If for some reason you are determined not 
to use macros (NB to me the phrase "macro 
variables" has no clear Stata meaning), 
then I would have thought that your only 
alternative was to type them in by hand. 

sts graph, by(sex) legend(order(1 "females (1776)" 2 "males (1812)"))
