An addition to the list of Books that Use Stata and Have Exercises:
[Wooldridge, 2003] Wooldridge, J. M. (2003). Introductory Econometrics. Thompson, Mason, Ohio.

[Wooldridge, 2002] Wooldridge, J. M. (2002). Econometric analysis of cross section and panel data. MIT Press, Cambridge, MA.

The exercises are not explicitly framed in Stata terms (whatever that might mean), but the relevant data are all available for download in Stata format, and the solutions manual for the second book uses Stata (maybe the first one too--I haven't seen it). Plus, they're paragons of clear writing and careful statistical reasoning. *
