Anward,

This book has 3 chapters on count data:
http://www.statapress.com/books/generalized-linear-models-and-extensions/

There's also an older book:
http://www.stata.com/bookstore/regression-models-categorical-dependent-variables/

If you want a more theoretical book, I like Econometric Analysis of
Count Data by Winkelmann or Regression Analysis of Count Data by
Cameron and Trivedi. There's going to be a new edition of the latter
coming out in April.
