Is there any reason why you wouldn't want to use the default Stata editor?

Smultron is an excellent text editor for mac that hasn't been
mentioned yet. I has awesome Stata syntax highlighting.

It used to be open source (and free in price) but now costs $5 USD.
This is may be a deterrent for your students, but it is great.
