read the help file. There are many options how you can do the stset.
Here is one example from the help file which covers most possibilities:

. stset dox, failure(fail) origin(time dob) enter(time doe) scale(365.25)

dox=dat of exposure
fail = the variable which specify if the patient is dead/sick or
whatever is the outcome.
dob = date of birth
doe= date when the patient came at risk, can be the same ad dox

You also need to have the dates in stata format, not DMY.
