st: how to define the complete path for a spreasheet (worksheet) in a worbook in tabout or estout command

Hi ,
I actually make thousands of statistics like everybody here and I use
the command tabout and estout in order to have them directly in excel
files.
BUT each time I do estout or tabout it creates a new workbook and I
would like that stata only create a spreadsheet in a specific
workbook.
How to tell to stata the complete path for the worksheet ?
Does anyone knows how to deal with it ?
