I'm not a mac user, so I don't know what LaTeXiT does. As far as I
know, what you want can't be done from within Stata. I'm not sure if
many people want to see this feature; one thing that comes up
regularly is greek letters on axes etc. which is a similar thing.

I tend to use psfrag.sty in LaTeX, which works by replacing some text
in an eps figure by some LaTeX text, which can be math mode or text
mode. It only works on eps, though.

Maybe someone else has a solution involving selecting the system fonts
for Stata graphs (cmsuper?); I don't know if that's possible.
