Just like you can split a title in a graph by 
giving the graph option two string (like 
title("very long" "title")) you can do the 
same with the labels on the axis. The only 
difference is that you now need to tell 
Stata which strings belong together by 
surrounding them with compound quotes 
(`" and "'). See the example below:

sysuse auto, clear
collapse (mean) mpg, by(rep78)

twoway bar mpg rep78, /*
*/ xlab(1 `""very" "long" "string""' /*
     */ 2 `""foo" "bar""' /*
     */ 3 "bla" /*

     */ 5 `""etc" "etc""')
