Your best bet may be to look at the graphics
commands under -help undocumented-. Beyond
that lies various stuff that is non-documented. 

Vince Wiggins has now put up a version of 
his excellent talk given at the London Stata users' 
meeting in June. That may satisfy some 
curiosity about learning more.
